2d Zelda for sure. Original, Link to the Past, Minish Cap/Wind Waker, and BOTW as art styles. Can you imagine with the depth that Mario Maker 2 appears to have. Would be AMAZING!!

But I would be really interested in Zelda Maker. And curious exactly how it would work. Zelda is not Mario with, y'know, levels. Outside of the multiplayer games most people don't care about anyway.
I don't have much interest in a Zelda maker. I like Zelda for the story, the setting, the exploration, the puzzles - all things that would be very, very hard to get right in small chunks. Sure, small LTTP-style dungeons would be doable, but those were never that interesting to me unless they had very clever, polished puzzles. If it were possible to make a game as expansive as a real Zelda it would be neat - but then I'd prefer devs get more creative, making their own new IP and putting it on Steam.
This. But based around GBA/DS style sprite based graphics, with access to all currently released Pokemon and modern battle mechanics. Making it based around sprites would make everything much more viable. People have been making Pokemon rom hacks and fan games for years and years already. Giving us a maker would be incredible and people would be throwing money at Game Freak for it, forever!
I'd also like to see a Fire Emblem Maker, also styled on GBA style sprites.
Legend of Zelda (preferably A Link to the Past, but maybe it could be a style...?) Maker. There was a fan-game that was going to do this, but of course it went through way too many changes and I don't know what happened to it now. lol
Pikmin Maker, well instead of a full-fledge Pikmin Maker game, I just want the ability to create your own caves from the second game. You can set how many Pikmin the player could have and what types, or let them have the option to choose. Have leaderboards for scores or time completion, stuff like that.
I would also add 2D Sonic, but a fan-game of that is already happening. (the creator went silent until recently, so hopefully it'll actually finish this year)
Super Metroid Maker - with styles from Metroid, Metroid II, Super Metroid, Fusion/ZM, Prime, Other M, and the 3DS Remake. It would probably be misused to make plenty of run&gun-sytle games like Mega Man and Contra, but Mario Maker is used for all kinds of stuff as well. I like the idea of giving my "rooms" a shape in contrast to Mario's horizontal/vertical one-or-two-screen-width only approach. Changing the shapes of interconnected rooms is essential to a Metroidvania. It wouldn't be limited by the maximum length of the course, but by the maximum number of rooms (or used spots on a map) you're allowed to create.
Donkey Kong Country Maker - original Donkey Kong Country graphics remastered to HD style, can be flipped to a modern Donkey Kong Country Returns/Tropical Freeze style or a trippy retro Arcade 1981 style. ^^
I'm an old school Donkey Kong Country fan though, and giving me access to just the 16-bit styles (DKC123) would be enough. Add the Online Time Trials from the modern games and it'll be perfect.
F-Zero Maker - Well, technically I mean "F-ZERO 99 X-CUP DEATH RACE VR + EXPANSION KIT".
The 99 is a reference to TETRIS 99 (99 online players at the same time), the X-CUP is a reference to the random stage generator, DEATH RACE is a reference to a mode in F-Zero X where you need to knock out all the other players, VR is a reference for this coming with a Captain Falcon VR helmet, and the EXPANSION KIT is a reference to the Japan-only 64DD F-Zero X expansion disk that added a course editor.
